Here is another vegetarian dish. Tasty and light for those hot summer nights.


Garbanzo Beans (chickpeas) with Steamed Vegetables
and Mixed Baby Greens


Serves 2 (with leftovers) All you have to do is reheat the leftovers which takes about 12 minutes!

Preparation time: 5-8 minutes (for cleaning and chopping vegetables and washing greens), beans pre soaked and cooked in advance and kept in the refrigerator until combined with the steamed vegetables

Cooking time: 15-18 minutes
Clean up time: 3-5 minutes
Total time: 23-31 minutes


Ingredients

Pure water (as needed for steaming the following vegetables):
1 carrot, sliced
3 sweet onions, chopped
4 zucchini (small/medium), sliced

1 & 1/2 cups fresh or canned diced tomatoes, no salt added
1 cup cooked garbanzo beans (chickpeas)
2 cups mixed baby greens
1 large broiled elephant garlic clove
1 tablespoon olive oil
sodium free all-purpose seasoning, to taste

  1. Preheat oven to 335 degrees.

  2. Steam the vegetables (carrot, onions, zucchini) for about 15-18 minutes or to taste and desired consistency. Add the tomatoes about 6 minutes before the vegetables are done and steam them as well. Mix the medley.

  3. Remove the vegetable medley from the steamer basket and place the medley in a large covered glass bowl.

  4. Prepare each bowl as follows: Add 1 cup steamed vegetable medley, 1/2 cup garbanzo beans, 1 cup mixed baby greens, 1/2 broiled elephant garlic (sliced), and seasoning to taste. Refrigerate the rest of the vegetable medley.

  5. Place filled bowls in the preheated oven. Warm for about 5-8 minutes or to taste.

  6. Remove from the oven, divide the oil in each bowl, mix well and serve. Enjoy!
